Precooling some vegetables can be a challenge, especially those with a high surface area and when much of the mass is not exposed. Vacuum cooling vegetables such as lettuces, leafy greens, cabbage, oriental vegetables has proven to be very successful for many years. In fact, in any medium to high volume applications it is the only practical way to precool vegetables to attain optimum shelf life due to its speed and efficiency. Quick and efficient precooling periods of 15 to 45 minutes are achieved depending on the type of product, amount of heat removed and other factors.

The vacuum cooling process combines vacuum pumps with
a refrigeration system to expose the vegetable to a lower
boiling point of the water within and on the vegetable
to be precooled, causing the water to cool, thereby precooling
lettuces and other vegetables.
Vacuum coolers are suitable for precooling: Lettuce,
celery, kale, cilantro, brussel sprouts, cabbage, endive,
escarole, leeks, mushrooms, Chinese vegetables, parsley,
spinach, collards, chard, cut flowers. Many more items
